Confetti Birthday Cake
Ingredients
Vanilla Sponge:
- 125 g Butter, softened
 - 125 g Selati Castor Sugar
 - 2 Eggs
 - 5 ml Vanilla
 - 140 g Self Raising Flour
 - 30 ml Milk
 
- 125 g Butter or Margarine softened
 - 250 ml Selati Icing Sugar
 - 30 ml Milk
 - 5 ml Vanilla Essence
 - For varied colours and flavours add 5 ml of Essence and just a drop of Colouring
 
Method
- Preheat your Oven to 180°C. Beat your Butter and Sugar in a mixing bowl until pale.
 - Add Vanilla and one egg at a time when beating slowly.
 - Fold in half your flour, then milk and end off with the balance of the flour.
 - Baking time will vary with the size of the tin and style of oven.
 - 2 x 20cm tins - 35 min.
 - Or until golden and the sponge springs back to the touch of your fingers when gently pressed.
 - Fantastic for Cupcakes too - this will average 16-18 minutes.
 - Cream butter and fold in half the Icing Sugar - beat in the Vanilla, Milk and add any colouring.
