Passion Fruit Curd
Ingredients
- 90 ml Passion Fruit Pulp
- 15 ml finely grated Lemon Zest
- 104 g Selati White Sugar
- 6 large Egg Yolks
- 56 g Butter
Method
- Combine all the ingredients in a double boiler or in a metal bowl over a pot of simmering water.
- Heat while whisking constantly until mixture thickens and reached 160°C, or coats the back of a spoon.
- Pour into a bowl and cover with clear plastic wrap pressed against the top of the curd to prevent a film from forming.
- Refrigerate until completely firm and cool, about 3-4 hours.
