Pizza Tomato Sauce

Celebrate Pizza Day with a slice of culinary perfection, where the savoury allure of Italian Tomato Sauce, enhanced by the subtle sweetness of Selati Sugar, transforms every bite into a flavour sensation. Picture a crispy crust topped with a rich, tangy sauce that tantalises the taste buds and transports you to the heart of Italy.

Ingredients

  • 15 ml Olive or Sunflower Oil
  • 15 g Butter or Margarine
  • 500 g Onions, peeled and finely chopped
  • 4 stalks Celery, chopped
  • 125 ml Parsley, chopped
  • Salt and freshly ground pepper to taste as cooking
  • 30 ml Selati Brown Sugar - can change to White if needed
  • 3 kg ripe Jam tomatoes, cored and halved
  • 250 g Carrots, peeled and finely chopped
  • 2 sprigs fresh Thyme
  • Handful of Basil Leaves
  • 2 ml dried Oregano
  • 2 Bay leaves
  • 4 Cloves of Garlic, crushed

Method

  1. Place the oil and the butter in a large, heavy based pot. Oil always before butter to ensure you do not burn the butter. Add the chopped onions with a sprinkle of salt, sugar and pepper.
  2. Fry gently, without browning until the onion is translucent. Add the balance of the sugar, thyme and oregano.
  3. Stir in the remaining ingredients without the Basil and simmer for 2 hours.
  4. Season with Salt and Pepper to taste as this cooks through
  5. Puree in a food processor with the fresh Basil.
