Pizza Tomato Sauce
Ingredients
- 15 ml Olive or Sunflower Oil
- 15 g Butter or Margarine
- 500 g Onions, peeled and finely chopped
- 4 stalks Celery, chopped
- 125 ml Parsley, chopped
- Salt and freshly ground pepper to taste as cooking
- 30 ml Selati Brown Sugar - can change to White if needed
- 3 kg ripe Jam tomatoes, cored and halved
- 250 g Carrots, peeled and finely chopped
- 2 sprigs fresh Thyme
- Handful of Basil Leaves
- 2 ml dried Oregano
- 2 Bay leaves
- 4 Cloves of Garlic, crushed
Method
- Place the oil and the butter in a large, heavy based pot. Oil always before butter to ensure you do not burn the butter. Add the chopped onions with a sprinkle of salt, sugar and pepper.
- Fry gently, without browning until the onion is translucent. Add the balance of the sugar, thyme and oregano.
- Stir in the remaining ingredients without the Basil and simmer for 2 hours.
- Season with Salt and Pepper to taste as this cooks through
- Puree in a food processor with the fresh Basil.
