Sweet Chilli Dressing
Ingredients
- 4 Red Chillies, halved, deseeded and finely sliced
- Salt to taste
- 500ml Selati White sugar (brown will change the colour so please don't edit unless castor)
- 5ml Fish Sauce - remove for Vegetarians of Fish Allergies
- 500ml Water
- 5ml Sesame Seeds - Optional when ready to serve
Method
- Slicing the chillies create a delicate look but if in a hurry, Place the chillies in a food processor with 100ml of the water from above.
- In a sauce pan, boil the water, add the sugar, pureed chilli and simmer until the sauce starts to thicken. Season with salt to taste only after adding the fish sauce.
- The Chilli dressing/syrup should still be pourable when cold, if not add a little water.
- Pour into sterilised bottles if you would like to store it for later.
