• 3 cups boiling water
• 3 rooibos tea bags
• 4 Tbs apricot jam
• Selati sweetener to taste
• 3 cups ice, plus extra to serve
• ½ cup mint leaves
Pour the hot water over the tea bags and allow to brew until strong.
Remove the tea bags and discard then stir in the apricot jam to dissolve. Either add extra apricot jam to sweeten or adjust the sweetness with Selati sweetener.
Add the ice to chill the mixture down.
Place the mint leaves in a jug and bruise them lightly with a wooden spoon. Add more ice to the jug and pour in the iced tea.
Once chilled, serve.
